White Castle Food Truck

Friday, December 20, 2013, BMI Federal Credit Union welcomes the White Castle Food Truck. This will be their first official "curb side" stop in the Columbus area. In honor of this event, White Castle will be bringing an additional item from their "By The Sackful" recipe book. Our members and food truck followers get to vote on which item they bring!

Spicy Cheeseburger Soup Hamburger Lasagna
10 White Castle hamburgers
1 1/2 cups water
2 cups cubed potatoes
2 small carrots, grated
1 small onion, chopped
1/4 cup chopped green bell pepper
1 jalapeno pepper, seeded and chopped
1 garlic clove, minced
1 Tbsp beef bouillon granules
1/2 teaspoon salt
2 1/2 cups milk
3 Tbsp all purpose flour
8 ounces American Cheese, cubed
1/4 to 1 tsp cayenne pepper (optional)
8 ounces bacon, cooked & crumbled

Combine water, potatoes, carrots, onion, bell pepper, jalapeno, garlic, beef bouillon and salt in a large saucepan. Bring to a boil and reduce the heat. Cover and simmer for 15 to 20 minutes or until the potatoes are tender. Stir in the meat and 2 cups of milk. heat . Combine the flour ad remaining milk and mix until smooth; gradually stir into the soup. Bring to a boil and cook for 2 minutes or until the soup is thick and bubbly, stirring frequently. reduce the heat and stir in the cheese. Cook until the cheese is melted, stirring constantly. Add the cayenne pepper. Top with the bacon just before serving.through
10 White Castle hamburgers
2 to 3 cups tomato-based past sauce
8 ounces sliced fresh mushrooms or 1/4 cup drained canned mushrooms
8 ounces shredded mozzarella cheese

Preheat oven to 325 degrees. Grease a baking dish large enough for 10 hamburgers to fit in 1 layer with sides touching. Fit the hamburgers into the baking dish and spoon some of the pasta sauce over and between the hamburgers. Saute the mushrooms in butter. Spread over the hamburgers. Add a layer of the pasta sauce over all. Top with the mozzarella cheese and Parmesan cheese. Bake for 15 to 20 minutes.Saute
